I'm a Real Dane Now

One thing that I have always been proud of is how ethnically and culturally diverse I am. Okay, so I am no Tiger Woods (for many reasons) who is like 15 different nationalities but still, I always felt more diverse than many of my peers. My mom is Mexican and my dad is Danish. This post will be about the latter.

My grandpa Nielsen emigrated from Denmark with his family when he was 14 years old. I am named after his mother, Anna. Although I’ve never visited Denmark, I have always had an interest in the country and taken pride in my Danish heritage. Every report I did in elementary and middle school was about Denmark, as many of my friends may remember. When I did a report on Denmark in the 5th grade I even had my grandpa come speak to my classmates about his native country, and everyone thought that was pretty cool.

Having a Danish grandfather meant that we had a lot of Danish traditions, which we still participate in today. One of these traditions is making Æbleskivers. Æbleskivers (pronounced able-skeevers) are Danish pancakes that are made in a special cast-iron pan. Although they are traditionally made on Christmas, my family always ate them on Halloween. Every Halloween after trick-or-treating we looked forward to going to my grandparents’ house and eating Æbleskivers.

This year, I realized that I would be missing out on this activity and that made me really sad! So, I decided that Glen and I would continue the tradition over here in Austin. Coincidentally, some of our new friends in our ward had an Æbleskiver pan that they had never used, so they let us borrow it.

I will let you all know that Æbleskivers are not easy to make! They took a lot of practice but after several tries I finally got the hang of it. I still need a little more practice but I think I will have it down by Halloween. Here are pictures of our adventure:

Batch # 1:

And my worried face:

Batch #2 is going better:

And I am hopeful:

The difference between batch 1 and 2 is remarkable.

And pretty embarrassing.

Trying again:

And again...

They look pretty normal! And I am ecstatic!

And then we look around the house and notice how smoking it is so we open all the windows and doors:

Glen is such a trooper!

What up, Æbleskivers?

I love my husband and I love my Æbleskivers. And my Danish Heritage.

Hooray!

Have a great weekend you guys!

  1. This may be the best post yet. Mostly because I remember eating Æbleskivers at your house, covered in sugar. Mmm! Great job on making them. I'm so proud!
